Simple Oven baked Acorn Squash

You can pick up either an Acorn, Butternut, or even Spaghetti squash for cents on the dollar at the grocery store- hence when fall hits I'm down for this at least once every week.
 

I have made these several ways, mainly using Smart Balance or any vegan butter, score the inside and simply season.  I used fresh thyme I grow myself in the photos above.
Or you can simply fill them with caramelized onions and bale :)  Its guaranteed to fill you up and make you all warm inside!
